My Comrades, the Taste Buds

The other day in chemistry, we talked about seawater, which is just 1% salt, yet still enough to kill you due to its relatively high concentration of isoelectrons.  A sense of betrayal twitched in my esophagus -- salt, my reliable friend, has always had the potential to make me into a shriveled-up cadaver.  Lovely.

Nevertheless, I really like salt.  Saltiness is probably the most glorious taste, followed closely by the refreshing chill of watermelon cubes and the bursting sweetness of plump Korean clementines.  Without salt, Hot Cheetos would be all pain and no pleasure.  Kimchi would just be peppery, fermented cabbages and radishes.  Mapo tofu and other soft tofu dishes would become spicy mush.  Eggs would be tasteless flabs of potential chickens.  And Gloria would be sad.


So there's salt, and eggs, and I'm pretty sure I could live a considerable amount of time simply relying on a skillet and those two ingredients.  But I assure you that I do have a wide range of taste.  I like sticking anchovies into tangerines.  I used to have an obsession with raw brussel sprouts from my neighbor's garden.  My friend recently asked the social media world for "the most delicious meal in the world," and I came up with an eclectic blend of raw oysters, watermelon...and three different egg dishes.

Aside from salty entrees, I have my particulars for sweets. I love oranges and grapes, but I hate orange- and grape-flavored candy. Tylenol and cough syrup are vomit-inducingly sweet, but I delight in devouring fruity cough drops throughout the year, sick or not. And then there’s limes. Even before my infatuation with lime green began, I had a strong bias for all things lemon/lime-flavored -- Sprite, yellow and green Skittles, yellow and green Sour Patch Kids, yellow and green M&M’s, etc (the last one was a lie; my taste buds aren’t acute enough to detect the differences in candy dyes). I don’t often eat actual limes, but no bowl of pho is complete without a subliminal squirt of citrus.

I was recently disillusioned at one of those amazing soda machines of wonder (see: Noodles, Meatheads). The brilliant artificial coloring of their Lime Fanta cajoled me to fill my cup to the brim, but I was speedily broken out of my citrus reverie by the actual taste. Please, if you ever have a strong desire to judge the quality of limes, do not base it upon this sorry excuse for a soda, unless it is heavily diluted by the more appetizing flavors of Strawberry and Raspberry Fanta.

Moral of the story: Even the holiest of foods can disappoint.  But at the core of it all, salt and limes rule the earth.

  1. I love this blog post! I have a habit of pouring buckets of salt on my popcorn, even if everyone says "Ew! That CAN'T be healthy!"

    I agree with what you said about orange and grape flavored candy -- it's disgusting. I don't see how they even resemble the actual flavors. Cherry, Blue Raspberry, and Green Apple are my favorite flavors of fruit candy.

    EW. ANCHOVIES AND TANGERINES??? That sounds so gross. How did you ever think of putting those two together?

  2. First, I have to talk about the little image. Awesome as usual, I could not help but chuckle when I saw the random orange airhead in the corner. :] The rest of the image is great too, except it took me a moment to realize that all the little lime civilians were all on a tongue, and not a funky purple table.

    Prior to reading this, I hadn't really thought about what the culinary world would be like if there were no salts or sweets. :( I suppose it just goes to show that we should take nothing for granted and be happy with what we have.

    We also share something between us that I have also not thought about in how my favorite candies are also my favorite color i.e. red Skittles, red Sour Patch Kids, and Coke (I guess it's not really red but the labeling is).

  3. I'm glad I'm not alone in loving lemon and lime flavored candy. Everyone thinks it's weird that I like the citrus flavors better than cherry or grape. I'm sorry one of the beauteous soda machines disappointed you. That is really horrible. Quite wretched.

  4. The part about the Noodles soda machine reminded me of the time when I dispensed ALL the Lime Fanta and then for some odd reason we were all enchanted by the enigmatic shade of gray that the Lime Fanta button turned to symbolize all the Lime Fanta being depleted.

    That shade of gray will be the symbol of the end times when all the soda in the world disappears, especially lime flavored ones :(

    One last note, if salt is so poisonous, why do assassins bother with complex chemicals for their potent poison when they could just pour a bag of salt into a cup of water and casually slip it to their victim? Hmm...

  5. Personally, I like all different kinds of fruit, but with artificial flavoring I prefer strawberry and cherry...and my favorite color is red. I had never noticed this before, now it seems sort of creepy...now I'm never going to be able to look at candy the same way again! :(

  6. My favorite skittles are the green ones too! What I'd really like to know, though, is when and how your lime obsession started?

    Also, I completely agree about the watermelon cubes. I absolutely love watermelon, definitely an addiction of mine! My parents recently stopped supplying me with watermelon, and I'm definitely experiencing withdrawals.

    Nice point about the salt, it definitely adds so much flavor!

    As you know, I love sugar, but I often have to balance it out with some salt. It's this never-ending cycle! If I have a lot of sugar, I have to make up for it by eating salty stuff. But then I've overdone that and have to eat more sugar. Then back to salt. Sugar. Salt. Sugar. Salt. Sugar...
    Anyway, I agree with you about loving oranges and grapes, but thinking that the candy industry's attempt at recreating those flavors is disgusting! One thing I disagree with you about is the cough syrup. I've always thought that it leaves a horrible aftertaste. :P

  8. Ok, I totally agree with you about grape- and orange-flavored candy and that sickly sweet Tylenol. It really doesn't do fruit justice at all. But I don't like fruit-flavored candy in general. That includes skittles and sour patch kids. Chocolate all the way!!

    With regards to kimchee, I'm also in complete agreement. I'm a pretty big fan, but if it weren't for the salt, I don't know if I could handle it.

    Also, great moral of the story. Limes and salt have a nice ring to them, too!

  9. Grape flavored stuff is gross! Seriously, if it actually tasted like grapes I would love it... but it doesn't because grapes are just sugar. Also, why do I feel like your penchant for limes and salt will lead to a future disposition for margaritas? This is slightly worrying, Gloria...

  10. Wow... you have really weird food preferences. Just sayin'.

    I really don't share peoples' attachment to salt. There are plenty of things I think would be better without it. Soft pretzels, for example. The salt on those tries to cover up the wonderful flavor of pretzelness. I also happen to like my scrambled eggs unadulterated by NaCl.

    THERE'S RASPBERRY FANTA??? Must. Have.

    The first lime (with the weird mask and sticking its tongue out) reminds me of something... it wouldn't happen to resemble something from Spirited Away, would it?

  11. Good post Gloria. I too enjoy salty and citrusy foods, but generally not together. ( Anchovies and tangerines sounds pretty unappetizing.) I also really like your lime artwork.

  13. Have you tried Tostitos lime-flavored tortilla chips? Judging from your love of salt and limes, they might just be the delicious blend of sodium and citrus you are looking for! Seriously though, lime nachos are the best.
